I prefer a great rhubarb mixed with strawberries in a flaky crust for that undeniable sweet, tart happiness that comes with long summer days.

Rhubarbs true season is April through June, but you can find it in early spring and thru the summer months.

When buying rhubarb always look for deep red stalks and leaves that are not wilted. You won’t ever use the leaves because they’re poisonous, but they’re a good indicator of freshness.
