Kale is the latest trendy thing to eat. Kale is a “superfood,” cholesterol-lowering champion, cancer-fighting hero, antioxidant and anti-inflammatory powerhouse. Okay, so maybe southerners didn’t know all of those things, or the fact that kale is rich in vitamins A, K, C, magnesium and fiber, neither did the rest of country until recently.
